Culinary Arts Faculty
Jamie Rotter
Jamie Rotter has worked his entire culinary career in New York State. In his early years in culinary, he worked at The Brae Loch Inn, the Brewster Inn, and Hullar's Restaurant. Rotter is a graduate of SUNY Delhi, where he earned his A.A.S. in Restaurant Management and B.B.A. in Hospitality Management. He also holds an M.S. in Service Management from RIT. Rotter has held certifications as a Certified Executive Chef and Certified Chef de Cuisine through the American Culinary Federation. Additionally, he was also certified as a Master Certified Food Service Executive through the International Food Service Executive Association. In 2008, Chef Rotter received the Chancellor's Award for Excellence in Faculty Service. He is currently the Culinary Arts Program Coordinator at FLCC and teaches public classes at the New York Kitchen.
Patrick Rae
Patrick Rae has worked in many states throughout his culinary career. He has held front and back-of-the-house positions for a variety of corporate and independent restaurants. Chef Rae has served as a private chef for musical bands and as an executive chef for residential summer camps. He also worked at Binghamton High School developing their culinary arts program. Chef Rae holds baccalaureate degrees in Business and Communications from Edinboro University of Pennsylvania, as well as a master's degree in Education from Canisius College. Chef Rae is currently an instructor in the Culinary Arts program at FLCC, and he teaches public classes at the New York Kitchen.
Paula Knight
Paula Knight has been an adjunct faculty member at FLCC since 2011. She has been a full-time faculty member since Fall 2018. Prior to teaching, Paula was employed in many facets of the tourism industry. She served as a Wedding and Event Coordinator at The Lodge at Welch Allyn in Skaneateles, NY. Paula was the Food and Beverage Director for the Holiday Inn in Waterloo, NY, and she was a Service Manager for Hobart and William Smith Colleges in Geneva, NY. In addition, Paula has helped with numerous events at FLCC throughout the past seven years. Paula is a graduate of FLCC. She also went on to further her education at Rochester Institute of Technology for both her bachelor’s and master’s in Hospitality.
